I like a nice piece of steak just like most of us but man, braised me some leeks in some white wine with cherry tomatoes & rosemary & I’m sold.
So easy, inexpensive, flavourful, hearty – you would be surprised how satisfying this dish is. Add a poached egg on top – Game Over my Friends.
To braise these gorgeous darlings, you want to cut the hard thick green tops off (totally inedible).
Slice the leeks down the middle & rinse under water. You’d be surprised how much sand gets trapped in the layers of a leek. Ever get a tiny bit of sand in your sandwich at the beach? Ya- same thing. Wrecks the whole thing.
Get a pan to high heat stovetop. Drizzle the leeks with olive oil, salt & pepper. Place the leeks sliced side down & sear until you get them nice & brown.
Flip, add some whole cherry tomatoes, minced garlic, a dash of Chili flakes, diced & whole rosemary.
Let all of those flavours hang out together for about 8 minutes then hit the pan with a dash of white wine. This will deglaze your pan & help create a killer sauce.
Add about 1/2 cup of chicken or vegetable stock. Reduce your heat & let that braise for about 15-20 minutes.
Your sauce will reduce nicely, the leeks will get soft & tender.
To finish, add a squeeze of lemon juice & some chopped fresh parsley.
Try this dish, I beg of you. Mine barely gets out of the pan before I’ve half devoured it.
