I have a hard time even talking about the scary downturn Peter took a couple of months ago. Cancer Patients when confronted with a virus, with reactions to meds with being run down can get dehydrated very quickly – for Peter that horrible month or so resulted in a rapid weight loss, extremely low blood pressure & dehydration. It became so severe so quickly that he ended up in an ambulance & had to go back to the hospital for fluids 4 times in a week.
Thank God he was able to take in fluids at home to recover including my homemade healthy broths & these super healthy fruit Granitas.
For the caregivers out there, this is the simplest recipe for Fruit Granitas that are all Natural, Hydrating, Refreshing & Tasty! Great Fruit ‘Ice’ for kids too!
Today I made 2 kinds that can be kept in the freezer, Organic Tangerine & Watermelon & Lime.
This is so easy!
Basically you want fresh organic fruit- for Citrus I love oranges, blood oranges, tangerines & even lemon & lime.
Try & stay clear of store bought juices unless you know they are organic, low sugar, pure, no additives or preservatives.
You want to juice the citrus so you don’t have any pulp.
For berries or watermelon, blend it in a blender until smooth then strain the fruit through a fine sieve so you get a clear Seedless pulp. Add lemon or lemon juice if you like.
Pour into a Dish, a pretty shallow one so it freezes quickly. Don’t cover, freeze for 2 hours, take a fork & start to flake the forming crystals up.
Put it back in the freezer for another hour & then flake up the crystals again.
Keep repeating every hour or so until you get an end product that is light & flaky & fully frozen.
You can get super creative with the flavours, add some pure ginger syrup, lemon, play around with your favourite fruits.
When Peter has had fevers, is dehydrated, has lost his appetite, this is my go to recipe.
