It doesn’t take much to get insane flavour from the simplest ingredients to make showstopper dishes with minimal effort!
I was lucky enough to meet & be mentored by some amazing Chefs during my travels through Italy.
The biggest thing I learned is the simplest food- 5 ingredients or less, can be the best!
Don’t over complicate dishes & let the local seasonal ingredients be the star!
One thing I love to do is roast heirloom & cherry tomatoes with red onion, garlic, thyme, chili flakes, good olive oil, a touch of balsamic vinegar, a sprinkle of sugar (to help bring out the sweetness of the tomatoes & help them caramelize), salt & pepper.
Roast at 350 for 30-40 minutes.
From there you can blend this beautiful roasted blend into a lovely tomato soup, or on summer nights like tonight, I like to toss it with some gnocchi, or linguine.
Add some fresh basil leaves, fresh mozzarella or Parmesan & blow your friends & family away with a simple but super intense summer pasta dish!
