Treated the gang to probably my favourite Chicken Wing Recipe Ever!
These are my Pok Pok Vietnamese Chicken Wings with a Marinade of Fish Sauce, Garlic, Lemongrass, Cilantro, Sugar, Lime Juice & Chili.
Topped with some Toasted Cashews, Pomegranate & fresh Lime Juice!
There were lots of ‘Yums!’ Going on in my house tonight.
This recipe is absolutely going in my cookbook!
I started with amazing Organic Chicken Wings- you bet it’s more expensive but man, what a difference!
- 1 cup fish sauce
- 2 tablespoons fine sugar
- 4 tablespoons or juice of 1 lime & the zest
- 2 finely chopped Chili flakes (take out the seeds if you want to temper the heat)
- 1 stalk of lemongrass- just make a few cuts to release the oils
- 1 bunch of cilantro, chopped
- 3 chopped garlic cloves
Pour over your Wings & let marinate for at least 3 hours but overnight is best.
Preheat your oven to 400 degrees, line your baking sheet with parchment paper.
Pour about 2 inches in a deep frying pan & get the oil nice & hot.
Dredge each of the Wings in cornstarch & fry until golden, place on the baking tray.
Bake for about 10 minutes.
Drizzle with a touch of honey, add some chopped Cashews, pomegranate seeds, fresh cilantro, a good squeeze of lime juice, some more chopped Chili if you want to pump up the heat – & get ready for the ‘Yums!’.
