That’s right, sweet peanut brittle with a touch of cayenne & just when you thought that wasn’t weird enough, you bite into a piece of double smoked bacon.
Good family friends of ours recently visited our lake house & brought this off the wall treat. (Thanks Mary M. – I’ll be sending my Brittle Rehab Bill to you). As soon as I had one bite I immediately hid the stash from Peter & the kids (it appears that I am Golem & this Brittle is my Precious). The crunch, the sweetness, a hint of spice, then the bacon – it hits all the right spots on my tastebuds.
It’s weird, so wrong & yet so right. Make this for the Brittle Addict in your life or Channel your inner Golem & keep this stash of Precious just for yourself!
Spicy Bacon Peanut Brittle
1 cup granulated sugar, 1 generous pinch of sea salt
1/2 cup light corn syrup
2 cups cups dry roasted peanuts, 1 good pinch cayenne pepper (you can use chili flakes if you like)
3/4 cup cooked cooked & finely chopped thick cut double smoked bacon (this is the bacon I prefer, but you can use applewood, maple glazed- it’s Bacon people – so it’s all good).
1 teaspoon baking soda & 1 teaspoon vanilla
Line a baking sheet with parchment paper & lightly butter. Stir together sugar, corn syrup, salt in a large microwavable bowl, microwave 2-3 minutes until bubbly, check it & stir in 1 minute intervals. Be careful! This baby is hot!
Stir in butter & peanuts, stop & stir often -microwave for about 5-6 minutes until golden brown. Remove from the microwave & carefully stir in bacon, baking soda, & vanilla. This will bubble so be careful.
Pour the entire mixture on your lined baking sheet. I like my Brittle about 1/4 inch thick. Let it completely cool, break it apart & stash in your secret hiding spot! 😏
