Here’s a great summer salad dish on warm nights like tonight when you don’t want to eat anything too heavy but still want some substance to your salad!
Summer Panzanella with grilled asparagus, cherry tomatoes, garlic, spring onions, diced ciabatta, pea tendrils & herb goat cheese.
In a hot pan add olive oil, chopped Asparagus, cherry tomatoes, spring onions, garlic, diced ciabatta (day old bread is best!). Salt & pepper to taste, sauté together until the olive oil coats the ciabatta & the cherry tomatoes just start to blister.
Add a dash of lemon juice, herb goat cheese (you can tear some fresh buffalo mozzarella in place of goat cheese), some fresh pea tendrils & flat leaf Parsley.
I like to drizzle some Hemp Seed Oil at the end (it’s so good for you & has an amazing nutty flavour).
