One of the best tools in my kitchen is a really great vegetable peeler. Not just for peeling your vegetables but you can create the best veggie ribbons from Zucchini, Carrots, even pear & apple ribbons add an extra sweet surprise to a salad.
For this simple dressing whisk together 1/2 cup of olive oil, 1/4 cup each of red wine vinegar & lemon juice & 1 tablespoon Dijon Mustard. Salt & Pepper to taste & it’s really that simple!
