I would write a lot about these mashed potatoes except that there aren’t enough words- this dish is so good it makes me cry.
Yes, potatoes can make me cry. Especially White Cheddar Chive Mashed Potatoes.
Absolutely when feeding a family on a budget – potatoes are a sure bet. Sometimes mashed potatoes can become monotonous, boring, bland, painfully repetitive.
Here’s how I pimp my Mashed Potatoes for a budget friendly mixup that is also damn delicious.
For my small family I dice up about 8 medium size Yukon Gold Potatoes. I chop them quite small so they boil faster plus the starch releases faster so it helps make them creamier.
To that I add:
A small splash of milk
2 heaping tablespoons of full fat sour cream
1/2 cup grated white cheddar (use any kind of cheddar you like, I just love white cheddar for this). 1/2 teaspoon baking powder (creates a nice fluffiness). Small knob of butter
Salt & Pepper to taste
Good handful of chopped chives
You can serve them just like this but if you want a nice texture – add them to an oven proof dish.
If you read my roasted chicken recipe, use that reserved roasted chicken fat & drizzle it over the potatoes (insane!) otherwise add a few knobs of butter & some more grated white cheddar to the top.
Bake in the oven at 350 for 30 minutes.
These make me cry, you will too.
